Keto Crepes are usually made plain (which are great) but I added some extra goodies to bump up the nutritional value !
6 ounces full fat organic cream cheese
1 tablespoons chia seeds
1 tablespoons flaxseed meal
1 tablespoons Whole Flaxseeds
Ghee or butter for cooking
– Blend all ingredients, except for the whole flax seeds, for 1 minute.
– Remove the batter from Blender and add the whole flaxseeds. Wisk in with a fork.
– Heat skillet and add 1/2 teaspoon of ghee or butter, pour 1/3 cup of batter and immediately swirl around to make a nice even crepe on MED/high heat.
– As soon as the top of the crepe is opaque carefully flip and cook only 30 seconds.
