I usually make a delicious pan gravy when I bake chickens but I needed something quick and fast! So here YA go!
1 whole onion, sliced
3 carrots, peeled and sliced
3 garlic cloves, minced
4 tablespoons tamari or coconut aminos
3 tablespoons ghee
1 tablespoon paprika
1/4 teaspoon ground pepper
1/8 teaspoon dry sage
1/8 teaspoon oregano
Salt to Taste
1-2 cups stock
– Caramelize the onions, garlic and carrots in ghee. This should take at least 30 minutes.
– Add the spices, salt and pepper and cook another 2-3 minutes.
– Blend with 1-2 cups stock depending on how thick you want your gravy.
– Simmer for at least 5 minutes
I like to make meatloaf mixture and shape into burger patties… I add them to the gravy and simmer for 15-30 minutes and serve over mash!
