Blackberry Coconut Milk Ice Cream

Now that it’s scorching out there it’s time to start making cool treats! No reason to make them unhealthy! This recipe took me 3 minutes to make… I froze overnight… And perfection!!!

2 cans organic full fat coconut milk
1 cup honey
1 teaspoon vanilla
2 tablespoons lemon juice (optional)
1 cup fresh blackberries (or any fruit for that matter)

– Blend the coconut milk, honey, lemon juice and vanilla for 2-3 minutes
– Add the blackberries and blend or leave them whole like I did!
– Pour in freezer safe container and allow to set.
