Pan Roasted Salsa

I was giving some wonderful jalapeños by my sweet friend Tammy … I made this quick and easy to make salsa and wanted to share this recipe. Enjoy! BTW … This recipe makes a large amount of salsa… Get ready to freeze some or better yet share!

18-20 fresh Roma tomatoes
2 sweet onions, cut into fours
4-6 garlic cloves
Jalapeños, to taste, I used 6
Olive oil
1 teaspoon oregano
1 cup cilantro
Salt and pepper to taste

– Place the tomatoes, onions, garlic and jalapeños in a pan… Drizzle with olive oil and cook on high!!! Do not over mix… You want to allow some charing to occur … See the pictures…
– Allow to cool a bit and blend (you may have to do in two batches)
– Add the salt, pepper, and oregano.
– In your last batch blend with the cilantro …
– Done!










Blackberry Coconut Milk Ice Cream

Now that it’s scorching out there it’s time to start making cool treats! No reason to make them unhealthy! This recipe took me 3 minutes to make… I froze overnight… And perfection!!!

2 cans organic full fat coconut milk
1 cup honey
1 teaspoon vanilla
2 tablespoons lemon juice (optional)
1 cup fresh blackberries (or any fruit for that matter)

– Blend the coconut milk, honey, lemon juice and vanilla for 2-3 minutes
– Add the blackberries and blend or leave them whole like I did!
– Pour in freezer safe container and allow to set.





Carrot Cubes

As I see my son run to the fridge to get ice cubes to throw in his hot plate of food I have this brilliant idea!  Carrot Cubes!  Maybe it’s because I have an abundance of carrots right now… or because orange is my favorite color?  So simple to make !!!  You can even use heart shaped ice cube trays to make them special for your little one!  




Simply place 4-5 peel and rough chopped carrots in your blend and add enough water to puree them, place in ice cube tray and freeze.  Once frozen you can remove from tray and place in zip lock bags.  Let me know what you think!
