I grew up eating oxtails just like this! In a saucy, spicy, tomato sauce that is absolutely mouthwatering! I am so excited to share this recipe… just like my Momma use to make (minus the spaghetti squash… that’s all me!) Best of all … it’s PALEO!
3-4 pounds oxtails
1 large onion, diced
1 can tomato sauce + 1/2 can of water
1 teaspoon garlic powder
sea salt to taste
– Place all ingredients in pressure cooker, crockpot or stove top pot (except the spaghetti squash)
– I always use a lot of jalapeños because we like this dish extra spicy
– Cook until meat is tender and falling off the bone, I used an electric pressure cooker and set it
for 45 minutes on high
– I boiled the spaghetti squash separately and served with the oxtail stew
