Fergie’s Cauliflower Fried Rice

Lordy… amazing flavors & textures!  Best of all… GUILT FREE!!!

1/2 Pound of Bacon, Chopped

8 Eggs, Scrambled

1 Head of Cauliflower, Processed in Food Processor

3 Green Onions, Sliced Thin

1/4 Head of Cabbage, Sliced Thin

1 Cup Shredded Carrots

1 Cup Chicken, Beef, Pork, or Shrimp, Cooked and Chopped

Tamari to Taste

Coconut Oil

– Heat a large wok or skillet and add the chopped bacon

– Cook until crispy and remove bacon, set aside

– Add the cauliflower and green onions… do not over mix, allow to cook on high in bacon fat

– Make a well and add a bit of coconut oil and cook the cabbage and carrots for about 1-2 minutes

– Mix all together for about 1-2 minutes and make another well

– Add a bit more coconut oil and add the eggs… cook until done

– Mix all together and sprinkle with Tamari Sauce

– Drizzle with Asian Hot Sauce… and Oh My!
