Day 25… Still going strong and loving it! Breakfast yesterday consisted of Kale Bowl with Sweet Potatoes and Eggs.

Lunch was a Lettuce Wrap with Roasted Chicken, garlic spread, beet and red cabbage sauerkraut and avocado.

Dinner was adobo flank steak and Frittata.

Hatch Chile, Meat & Veggie Frittata

I love making frittata’s in the beginning of the week.  Its my go to food when I am busy and on the go.  I have been craving hatch chiles for some time.  It reminds me of my childhood … my dad spending hours outside roasting chiles… I love that smell! This frittata is amazing… absolutely fool proof!

1 onion, chopped

1 lb. ground pork, beef, turkey or chicken

2 cans roasted hatch chile

1 yellow squash, julianne

1 zucchini, julianne

4 carrots, julianne

17 large organic eggs, scrambled

salt & pepper to taste

– Preheat oven to 400

– Cook onion, meat of choice and hatch chile in a large skillet

– Generously grease casserole pan, pour the egg

– Pour the meat mixture over the top

– Add the squash, zucchini & carrots right over the top

– Press the veggies down so that the egg comes out and over the top

– Bake for 45 minutes

PERFECTION !!!

Still going strong… I have to be honest and say I did go to wine country and had 1 glass of red wine .  I did not over indulge and did not eat any junk… just 1 glass of red wine and I do no regret it!  I also decided to plan our paleo meals a bit better … Prep days are still going strong on Sundays.  This is what is on the menu for this week…

I know it seems like a lot of food but I have 2 girls who burn anywhere from 8000-10,000 calories a day at swim & water polo practice, a growing 9 year old son, and a fire fighter husband who is over 6 feet tall who works out.  Well… I read somewhere that it takes 28 days to form a habit… I feel there already.

Paleo Espresso Fudge Brownies

I taught a Gluten Free Baking class at work tonight… a couple of my front row students asked for my Espresso Fudge Brownie recipe.  As promised and a day and a half early… here it is!

1/4 cup very hot strong coffee or espresso

10 oz dark chocolate

1 cup melted coconut oil

1 cup dark cocoa powder

2 tablespoons bacon fat (optional)

1 cup maple syrup

6 eggs, room temperature, scrambled

– In a double broiler combine the coffee/espresso, chocolate

, coconut oil, bacon fat if you are using it and maple syrup

– Whisk continuously until smooth

– In a food processor add the eggs and turn on… drizzle the above chocolate mixture

– Pour into a well greased pan and bake at 375 degrees for 25-30 minutes

– Keep an eye on them, remember all ovens will vary.

– Allow to cool completely before cutting with a very sharp serrated knife…

AMAZING! AND ABSOLUTELY FLOUR-LESS!!!

 

Whole9 Day 21

I continue to loose weight… it’s not coming off as fast as before… but it’s coming off. I really feel like I am on a high all the time. I feel rested and refreshed. I have random people asking me what I am doing because I even seem different! Food is no longer a challenge. I pack my meals before I leave, I have a container full of macadamia nuts and pecans. I carry a small ice chest full of waters and kombucha. I am rocking this challenge. I could not wait for this to be over and now I have no intentions of going back! I love this!

Simple Sweet Potato Hash

When I started my Paleo quest I was told to eat sweet potatoes… my first response was yuck! I have always hated sweet potatoes.  I have forced myself to eat them and little by little I am learning to love them!  This is one of my favorite sweet potato dishes.  I make a large pan and have it in different ways during the week.  Best of all … the kids love it!

4-6 sweet potatoes, peeled & cubed

1/2 onion, diced

6-8 slices of bacon

Sea Salt & Pepper

– Slice the bacon into small pieces, heat the skillet and add the bacon

– Cook until most of the fat is rendered and the bacon begins to brown & crisp

– Add the diced onion and cook with bacon until onion is soft

– Add the sweet potatoes, lower the heat and cook until soft

– Serve hot with a poached or fried egg on top … MMMmmm

 

Whole9 Day 19

I have been a terrible blogger! Thing is I feel so energetic I am put and about more than ever!!! It’s been 19 days! I seriously can’t believe it. In the beginning I had a running list of things I would reincorporate into my diet after the 60 days. I have since tossed that list! I have worked so hard up to this point and don’t want to go back! I am down 25 pounds !!!! It’s crazy! I am seeing changes in my body I have never seen before. I am slimming down and getting stronger in the process!

Whole9 Day 17 !!!

Day 17… It’s all easy street from here! I haven’t had a bad craving day in a long time! It’s my birthday and was even good today despite all the goodies that were given to me. Family took me out for sushi and I ordered lemon water, spicy tuna hand roll ( no rice ) extra avocado and a special roll wrapped in thinly sliced cucumber with salmon, albacore and spicy tuna ( no rice ) drizzled with spicy mayo! Strict paleo is not that bad and I feel great with is what matters right? Now… On to prep for this weeks goodies!!! Menudo is on the menu (minis the hominy) , pull pork lettuce wraps, paleo cook up, frittata and much more! Tootles!

Saucy Spicy Oxtail Stew

I grew up eating oxtails just like this!  In a saucy, spicy, tomato sauce that is absolutely mouthwatering!  I am so excited to share this recipe… just like my Momma use to make (minus the spaghetti squash… that’s all me!) Best of all … it’s PALEO!

3-4 pounds oxtails

1 large onion, diced

pickled Jalapeños

1 can tomato sauce + 1/2 can of water

1 teaspoon garlic powder

sea salt to taste

– Place all ingredients in pressure cooker, crockpot or stove top pot (except the spaghetti squash)

– I always use a lot of jalapeños because we like this dish extra spicy

– Cook until meat is tender and falling off the bone, I used an electric pressure cooker and set it

for 45 minutes on high

– I boiled the spaghetti squash separately and served with the oxtail stew

Whole9 Day 13

Day 13!!! Almost 2 weeks. Unbelievable! Sugar free (except for the 2 grams in my Kombucha) !!! Caught hubby with a biscuit yesterday! What a turd! I am sure he’s cheating but I am taking baby steps with him. He is home for another 6 days then he’s back to the fire station… Where lord knows what he’ll eat! Today’s breakfast was roasted chicken, yellow squash, farm fresh eggs and salsa fresca. Lunch will be chicken soup and dinner is in the works.
