Fergie’s Turkey Breast & Potato Paprikash

We were in the middle of a huge summer rain/thunderstorm and I decided (against my better judgement) to order my kids some pizza.  I picked everything on the pizza, sides, and just as I was about to place the order… the power went out! Ha Ha Ha… it was a sign for me to take those fresh turkey breast out of the fridge and make something amazing!
2 Turkey Breast, cut into 4 pieces each
1 Onion, Sliced Thin
3 Tablespoons Olive Oil
2 Tablespoons Spanish Paprika
2 Tablespoons Smoked Paprika
2 Teaspoons Cumin
4-5 Garlic, Cloves
3 Cups Unsalted or Low Salt Chicken Stock
6-7 Small Potatoes, Peeled and Sliced
Salt & Pepper to Taste
–  Cut each turkey breast into 3-4 pieces each, generously salt & pepper each side
– Heat olive oil in a heavy pan & add the chicken
– Brown on both sides, you are not cooking all the way through… just browning
– Add the onions, garlic and spices, cook for another 3-4 minutes
– Add the stock & potatoes, adjust salt & pepper, and simmer for about 35-40 minutes
– Serve with some steamed Basmati or Jasmine Rice
